On February 11, 2025, the University of Milan will welcome researchers and academics for a one-day event dedicated to Spoke 4, titled “Food Quality and Nutrition into Action.” Organised at the DeFENS Department of Food, Environmental and Nutritional Sciences, this meeting will offer a comprehensive overview of Spoke 4’s research activities and future perspectives.

The morning session will feature an introduction and overview by Prof Sabrina Dallavalle (Director of the Department of Foods, Environmental and Nutritional Sciences – DeFENS), Prof Patrizia Riso (University of Milan, Spoke 4 Leader) and Prof Daniele Del Rio (University of Parma, Chair of the Board of OnFoods Foundation), followed by a series of presentations from Cascade Call–funded projects.

In the afternoon, attendees will move into focused sessions dedicated to each Work Package—covering product and process innovation; product characterization by advanced analytical approaches; healthy, sustainable and personalised precision nutrition; and innovation in food design and scaling-up. Each session will be led by key experts, showcasing the status of current research and the roadmap for future activities. A special Early Career Scientists segment will highlight the contributions and upcoming goals of emerging researchers.

The day will conclude with remarks from Prof Patrizia Riso, setting the stage for the next steps in advancing food quality and nutrition. By bringing together specialists from multiple disciplines, this event aims to foster dialogue, drive innovation, and ultimately contribute to healthier and more sustainable food systems—locally and beyond.
