Identification of nutrient and non-nutrient food components (and their metabolic products) potentially involved in the promotion of consumer health, and evaluation of their bio accessibility, bioavailability, and effect on the gut microbiota, using in silico, in vitro, ex vivo and in vivo approaches on humans/animals to confirm the actual absorption and bioactivity of non-nutrient components also considering specific dietary patterns and target groups.

Coffee is the second most consumed brew in the world, after water. There are many molecules extracted from roasted coffee beans with pharmacological properties (anticancer, anti-inflammatory activities, etc.). Several researchers reported that preparation methods influence directly the levels of antioxidants, caffeine, and molecules connected with healthy promotions.
We consider it so important to have a mapping of the nutrients extracted from the coffee brewing using our coffee machine. Other research projects will study the effect of plant based diets, and we see that as a good opportunity to collaborate and investigate the influence of coffee-based beverages on human health (coffee based beverages).
